How to Make Scrumptious Candied Fruit Cupcakes

The popularity of cupcakes just seems to increase, and the level of creativity appears to be growing just as rapidly. Chances are at some point you will find yourself making and serving cupcakes, and when you do make them something truly special. This version is one that I would keep under wraps until you are preparing for a group of adults, sort of the adult version of the beloved cupcake if you will.

The term cupcake might conjure up visions of cloudlike frosting, and every color combo under the rainbow. However, as we know, adults adore these mini cakes as well, and will appreciate a modern twist that does not involve risking a bite that leaves them with magenta coloured frosting on the tip of their nose.

Make the underlying cake as you would for any function, and replace the hulking scoop of frosting with candied slices of fruit. I know what you are thinking elegant, crafty and original, because that is exactly what I thought when I came across this too.

To make the topping first thinly slice your citrus fruit of choice. Boil sugar water to make simple sugar syrup. Place the unpeeled fruit into the syrup on a low heat, and allow to simmer for one hour. The fruit should be in a softened state, but still hold its form. Finally place aside to cool, and then apply to the tops of your adult cupcakes.
